Side Note

Sushi aside, I've realized that Shrimp Paneer is quite possibly one of my favorite foods.

Simple, easy to make, full of vibrant, heated flavor ... the perfect comfort food for all the right reasons (unless you're my thighs).

It's 11 p.m., and I'm just now able to eat the dinner I made 5 hours ago.

And it is perfect. Nutty, aromatic basmati rice. Large gulf shrimp (from a crazy sale back when we were both employed), smooth, melty pieces of paneer bathed in a wonderfully creamy tomato base, a vibrant explosion of a number of spices. Mild enough to not interrupt the flavor, spicy enough to make your lips tingle for a moment after the last bite.

Never mind I'll have heartburn from the spices, the cheese and the tomatoes.

For five blissful minutes, all was right with the world.
